On the Photos tab of the device view in iTunes, look to see what it’s syncing them to. On my Windows machine, I have a choice of either a folder location or Photoshop Elements.
If I set it to a folder location, they’d go to that folder. When set to Photoshop Elements, I don’t know where on the hard drive they’d be, but they’ll be findable via Elements.
On a Mac, I’d suspect that your choices include a folder location and iPhoto.
